Grilled goats cheese, Roasted beetroot and balsamic dressing

Ingredients 1 Number of people
1 x 1cm slice goats cheese
1 x slice smoked streaky rasher
1 x bunch mixed leaves
1 x piece cooked baby beetroot diced
1 x tsp thyme leaves
2 tbsp x honey
1/4 cup x balsamic vinegar
Directions
For the dressing bring the vinegar and honey to the boil reduce by 1/3, chill until required.
Wrap the slice of goats cheese in smoked rasher and gill or cook in a hot pan without oil until bacon is cooked and cheese is soft, season the beetroot with salt & pepper and thyme, heat in oven until warmed.
Arrange leaves in centre of plate top with warm beetroot then the grilled goat's cheese drizzled with the dressing
