Cauliflower pizza crust

Ingredients 2 Number of people
2 cups grated cauliflower (roughly 1/4 of a cauliflower, depending on size)
2 eggs
50g emmentaler, grated (mozzarella could work too)
1 clove of garlic
2 tbsp olive oil
Oregano (or other seasoning to your taste)
A pinch of salt and pepper
Directions
Pre-heat oven to 180 degrees.
Chop cauliflower in smaller bouquets and rinse. Put them in a blender and blend until very fine.
Mix cauliflower "grains" with the rest of the ingredients and put on a baking tray covered with baking paper. The mixture is quite liquid and you can make any shape you want.
Bake the pizza dough without topppings for 15-20 minutes, until golden. Now you can add your favourite toppings, bake some more and go nuts :)
Notes/Tips
This is an amazing pizza alternative if you're staying away from gluten. When I first heard of it I didn't believe it would actually become a pizza, but it does (and it doesn't really taste of cauliflower!)
When I add the toppings I only bake the pizza for another 5-8 minutes, so it doesn't become too dark around the edges (the one in the picture got a little too much). So if you have ingredients that need to bake for longer, I suggest you pre-cook them a little.
I don't use tomato sauce on this pizza. I think it might become too wet and soggy. Instead I use tomato paste, which works very well.
