Low sugar, butter-free Chocolate Truffles

Ingredients 6 Number of people
For 50 truffles:
- 200 g of dark chocolate (minimum 70% of cocoa)
- 15 cl of plant-based cream (soya, rice, coconut or almond)
- 1 tablespoon of agave or maple syrup
- 2 teaspoons of virgin coconut oil
- 1/2 teaspoon of cinnamon
- Cocoa powder (without sugar)
Directions
- Put chocolate, cream, cinnamon, syrup and coconut oil in a bain-marie (water bath). Once chocolate has melted, stir the ganache with a spatula. Let it cool down in the fridge for 1 hour, stirring it from time to time.
- Form little masses of ganache on baking paper with the help of 2 teaspoons or a piping bag. Put them in the fridge (or outside, if the weather is sufficiently cold) for 1 hour.
- Form truffles by rolling the frozen masses of chocolate between your palms, then roll each truffle in cocoa powder
- Put the truffles in a metal bowl and leave them in the fridge for 1 week max.
