Easy creamy cauliflower and corn soup

Ingredients 2 Number of people

1 head of cauliflower (organic if possible)
1/4 bag of frozen corn (organic if possible)
1 vegetable stock cube (organic if possible)
1 L water
Himalayan salt
Pepper
EV olive oil
Basil
Coconut oil

Directions

Crush the stock cube into 1L of boiling water
Add in the cauliflower florets and corn
Add in one tablespoon coconut oil
Bring to boil and simmer until the cauliflower is tender
Take off the heat and use a handheld blitzer until the soup is creamy
Put soup back on the heat to simmer for another 2 minutes
Add salt and pepper to taste
Once soups is done, take off heat and serve in bowls
Chop your herbs and scatter into the bowl
Drizzle a small amount of EV olive oil*


* you can omit the extra drizzle of oil if you find this too much fat for your liking. However, recently studies have shown that EVOO could potentially help in controlling Lupus so I drizzle it on most things.

Notes/Tips

This recipe is vegan, anti-inflammatory, high in good fats, great for digestion.
