Easy baked eggs in avocado

Ingredients 1 Number of people
1 x avocado (organic if possible)
2 x medium eggs (organic and free run if possible)
Himalayan salt
Pepper
Ground tumeric
Directions
Preheat oven to 400F
Line a baking pan with foil
Slice the avocado in half and remove the stone
Place both halves of the avocado on the baking tray and scoop out some of the flesh from both halves
Lightly season with salt, pepper
Crack an egg into each half of the avocado - don't worry if some of the egg white spill out
Season the egg / avocado with salt, pepper and tumeric. At this point you can add in any other herbs, spices or toppings you like
Bake for about 8 minutes, however if you like your eggs more runny bake for less time, and bake for longer if you like a harder egg
I like my baked eggs in avocado with a side of vegetables such as roasted asparagus. For a more filling dinner I'd add in half - 1 cup of cooked quinoa.
Notes/Tips
The avocado provides good fat, various vitamins including K, C, B5 and folate. The eggs provide protein, B12 and vitamin D. Hemp seeds provide vitamin E and a lot of essential fatty acids. Tumeric is well known to help with inflammation.
