Sirloin with herbs and black olive caramel

Ingredients 10 Number of people
For the Sirloin
• 40 g of sirloin per person
• 1 bunch of parsley
• A few sprigs of cilantro
• 250 g of fine breadcrumbs
• 1 knorr cube
• 50 g of cold butter
• 2 tablespoons of Dijon mustard soup
• Salt and pepper
For the caramel of black olives
• 200 g of sugar
• 1 can of black olives
• 2 tablespoons of water
Directions
1. In a hot pan, put a little olive oil and slightly cook on both sides.
2. Add salt and pepper, brush the top with mustard and leave aside.
Green breadcrumb coating
1. Mix the garlic, the parsley, coriander, breadcrumbs, salt and pepper.
2. Pour into a bowl and add cold butter and mix it as a crumble. Leave aside.
3. Put your sirloin in a baking dish, spread mustard and sprinkle with herbs crumble.
4. Bake in a preheated oven at 120 degrees for 30 minutes (low temperature to keep cooking).
Caramel of black olives
1. Pour the sugar in a saucepan gradually to achieve a dry caramel (do not leave out of sight, it burns very quickly)
2. Cut the black olives finely with a knife.
3. As soon as the caramel will turn amber, cook with black olives and add water.
4. Mix and put in a bowl to cool.
