Rolled stuffed zucchini with smoked salmon and herbs

Ingredients 10 Number of people
• 5 wraps
• Smoked salmon
• 3 zucchinis
• 260g of mascarpone
• 10 cl of liquid cream
• Mint
• 4 cloves of garlic
• 3 limes
• Salt
• Pepper
Directions
1. Cut the zucchini lengthwise using a mandolin. Put them in salted boiling water, then cool them immediately in ice water.
2. Cut strips of smoked salmon.
3. Chop the mint
4. Mash the mascarpone with the liquid cream. Attention, the mixture should not be liquid.
5. Clean the garlic cloves and put them through a garlic press.
6. Add the cream, salt and pepper and add a twist of lime.
PRESENTATION
1. Over the wraps, spread a layer of zucchini, cream and smoked salmon. Add the cream again and then a final layer of zucchini.
2. Roll the wraps ensuring that they are tight, then ensure them with toothpicks. Cut small slices.
