Roasted chicken with dates and olives

Ingredients 4 Number of people

8 chicken legs (2kg)
5 garlic cloves, crushed
Small bundle of sage (30 leaves)
3 tbsp red wine vinegar
3 tbsp olive oil
100g pitted green olives
50g capers, plus 2 tbsp of their juices
100g dates
100ml white wine
1 tbsp date syrup (honey works fine too)
Salt and black pepper

 

Directions

Turn on oven to 200 degrees.

Chop dates, olives, capers and sage and mix with salt, pepper, garlic, oil, balsamic vinegar, honey and white wine.

Cover chicken with marinade and let sit for a few hours (preferably 24 hours).

Roast in oven for 45 minutes or until done. Occationally baste chicken with the marinade.

Notes/Tips

Make sure some of those olives and dates are on top of the chicken while roasting, so they get nice and crispy/ caramelized.

When I am in a hurry I don't pre-marinate the chicken, but it still tastes great.
