Honey Mustard & Lemon Chicken

2 Chicken Breasts

2 Table Spoons Honey (may be substituted with artificial sweetner)

1 Teaspoon Mustard (any)

Any chosen salad or veg to suit

New potato's or rice

Directions
Cut the lemon in half and slice one slim ring from each half – keep the two rings covered in the fridge till needed. Extract the juice from the rest of the lemon.
2. Combine the lemon juice with the honey and mustard to make a dressing.
3. Toss the chicken breasts in the marinade dressing & leave covered for 2+ hours in fridge. .
4. Preheat oven to 180. Lay a piece of tin foil large enough to wrap the chicken in the bottom of an ovenproof dish. Place the chicken breasts in the middle & placeone of the reserved lemon slices on top of each breast for added lemon flavor. Fold over the tin foil to cover the chicken keeping it nice and loose, then place in oven for around 40 mins.
5. Steam or boil the new potato's or rice & your chosen veg and keep warm or prepare the salad,
6. Serve the chicken with lemon ring & all cooked juices on plate with boiled potato's / rice & veg or salad and you have a healthy meal with little preparation time in less than an hour.
Garnish with a sprig of rosemary or some other herb or a little chopped herb such as parsley or chive.
Notes/Tips
To reduce calories or eliminate the sugar content even further, replace the honey with artificial sweetner.
I normally prepare it after dinner one evening to cook for the next night, so it marinades for about 24 hours
