Apple muffins without gluten

Ingredients 10 Number of people

2 large eggs

90g of rice flour 

35 g of almond powder or rice flour

80 g of sugar

125 g butter at room temperature

5 tablespoons of rice milk

1 teaspoons of baking powder without gluten (it can be replaced by bicarbonate)

3 apples

Cinnamon powder

 

Directions

Remove the butter from the refrigerator before starting.

Preheat oven to 180 ° C (thermostat 6)

Mix the flour, ground almonds and baking powder.

Add the butter at room temperature. Stir it with a fork, crushing against the flour.

Then add the sugar and 1 egg. Stir with a whisk and add the second egg.

Finally add the milk and stir with a whisk.

Pour the mixture in cupcake moulds of silicone.

Peel the apples, cut them into strips and put 4 to 6 pieces inside each cupcake by lightly pressing them into the dough. Sprinkle with sugar and cinnamon.

Bake at 180 ° C for 21 minutes.
